1 pound Princess Beef
1 cup finely chopped onions
½ cup chopped cilantro
½ cup chick pea flour (regular flour will be fine)
2 Tbls. ginger powder
2 Tbls. yogurt
3 Tbls. fresh lemon juice
1 tsp. cumin
1 tsp. coriander
1 ½ tsp. garam masala
1 tsp. salt
½ tsp. saffron
In a mixing bowl combine all the ingredients and knead vigorously with both hands until the mixture is smooth.
Divide the mixture into about 16 roughly cylindrical portions and string them onto skewers or put them onto a pan to broil. Cook/broil for about five minutes, turn the kebabs and broil for another five minutes. The kebabs are done when they are browned evenly and no trace of pink shows when the meat is pierced.
Serve with a side mixture of yogurt, salt and cumin to taste.
